    Tuk Tnot (palm wine) is collected daily from the flower buds of Cambodia's iconic sugar palm trees. Expert palm climbers scale the tall trees at dawn to collect the fresh sap in bamboo containers. When fresh, the juice is sweet, nutritious, and non-alcoholic. Left to sit for a few hours, it begins to ferment into a mildly alcoholic wine. Further fermentation produces palm vinegar. The sugar palm is Cambodia's national tree and appears on the coat of arms.
