Prahok is to Cambodian cuisine what soy sauce is to Japanese cooking — an absolutely essential fermentation that provides deep umami flavor. Made from small freshwater fish (usually trey riel from the Tonle Sap), the fish are crushed, salted, and fermented for months in large clay jars. The resulting paste ranges from mild to intensely pungent. It's used as a cooking ingredient, condiment, and even eaten raw with rice and vegetables.
